• 18-24 cooked Crystal Bay Tiger Prawns, peeled
  • 1 medium red onion, sliced
  • 1 red capsicum, sliced
  • 1 large or 2 small zucchinis diced
  • 1 cup fresh basil leaves
  • 80g pecorino cheese, grated
  • 1 packet linguini pasta, cooked
  • 30 ml extra virgin olive oil
  • Method

    Heat and grease a large frying pan with oil.

    Add onion, capsicum and zucchini and brown each side until nicely caramelised. Stir well.

    Add the prawns and allow to heat through.

    Add the cooked linguini.

    Garnish with the fresh basil and drizzle with extra virgin olive oil, pecorino and pepper.
