The Original Crystal Bay Prawn
(Fenneropenaeus merguiensis)

Crystal Bay Prawns are a favourite for Australian seafood lovers due to their light, sweet flavour. When cooked, they are a pale pink colour and have a sweeter taste than other prawns with firm white flesh and a nice crisp texture. Crystal Bay Prawns are well suited to Asian style cuisine as their sweetness goes well with spicy flavours.

Commonly 20 – 30g and 14 – 17cm body length, Crystal Bay Prawns can grow to 75g and 25cm. Crystal Bay Prawns are typically supplied whole cooked, and depending on the production cycle can be fresh or frozen. Typical Sizes Available: 10/15, 16/20, 21/30 platter

The Crystal Bay Tiger
(Penaeus monodon)

Crystal Bay Tigers provide a spectacular presentation due to their bright glossy orange colour when cooked and should have a crisp bite or 'snap' and a pleasant sweet, juicy taste.

Commonly 20 – 45g and 14 – 20cm body length, Crystal Bay Tigers can reach 30 cm in length and up to 300 grams. However they are commonly harvested before they reach 45 grams.

Live Crystal Bay Tigers are blue brown in colour with distinctive blue / black and yellow / white bands on their carapace and abdomen. When cooked, Crystal Bay Tiger meat turns white and the black stripes on the carapace turn bright red.
