• 18-24 cooked Crystal Bay Prawns®, peeled
  • 150ml plain Greek yogurt
  • Juice and zest of 1 lemon
  • Spring Onions or Chives, sliced
  • Cracked black pepper and cayenne pepper to season
  • Iceberg or Cos lettuce, washed and separated into cups

    Place the prawns in a bowl.

    Add the yogurt, lemon juice, lemon zest, spring onions, black pepper and mix.

    Season to taste.

    Scoop into the lettuce cups.

    Serve with spring onions and a sprinkle of cayenne pepper.
