• 18-24 cooked Crystal Bay Prawns®, peeled
  • 30ml olive oil
  • 1 onion, finely chopped
  • 1 family size sachet pre-cooked rice
  • Juice and zest of 1 lemon
  • 200ml coconut cream
  • 1 cup baby peas
  • Coriander and black pepper to garnish
  • Method

    Heat oil in a large frying pan.

    Add the onion and cook until soft and brown.

    Add the rice, prawns, juice, zest, coconut cream, peas and stir until heated through.

    Season to taste.

    Garnish with fresh coriander and black pepper (optional).
