Prawns with Aoli & Croutons

Ingredients

- 1 ½ kg Cooked Crystal Bay Prawns, unpeeled
- Light Rye bread, sliced and lightly toasted
- Aoli
- 3 egg yolks
- 1 Tablespoon lime juice
- ½ cup canola oil
- 1 clove garlic
- sea salt
- Lime wedges

Process egg yolks with lime juice in a food processor for 1 minute, continue running and gradually add half the oil then add garlic and process until well combined. Gradually add the remaining oil and season with salt and store in an airtight container. Serve with cooked Crystal Bay Prawns, croutons and wedges of lime.
