Crystal Bay Prawn Ceviche

- 6 Crystal Bay Prawns
- 1 Red cherry tomato cut in half
- 1 Yellow Cherry tomato Cut in half
- 10 Coriander leafs
- 1/10 Red Onion, thinly sliced
- 2 flower of broccoli (Blanched)

Method
Boil the Crystal Bay Prawn for 1 min, cool and peel. Cut the Crystal Bay Prawn tails in half and mix with the cherry tomatoes, onion and Ceviche Sauce. Arrange nicely in a bowl and top with coriander leafs.
Ceviche Sauce
4 tablespoon lemon juice
2 tablespoon yuzu juice
1/2 teaspoon salt
1 teaspoon say sauce
1/2 teaspoon finely grated garlic
1/2 teaspoon grated ginger
1/2 teaspoon finely ground black pepper
1 teaspoon Aji Amarillo paste (Peruvian Chili paste, can substitute with Chili)
Combine all the ingredients
