Prawns in Caviar Dressing with Japanese Sake

Ingredients

- 6 Sashimi grade prawns
- 2 teaspoons caviar
- 1 teaspoon salt
- 2 teaspoons Japanese sake
- 2 lime or lemon slices

Remove the prawn heads, shell and tail. Then remove the vein and cut the prawns into small pieces. Sprinkle salt on the prawns and mix finely.
Refrigerate the prawns for 10-15 mins. Then once refrigerated remove from the fridge and add 1-2 teaspoons of sake to the prans and mix again. Then add the caviar and mix again. Take the lime or lemon and remove the flesh inside leaving the peel as a shell. Within the shell pace the prawn and caviar mix, as per the illustration shown.
