Corainder, Lime and Ginger Dipping Sauce

Ingredients

- 1kg fresh-cooked whole Crystal Bay Prawns
- 1 bunch of coriander
- 1 teaspoon finely grated ginger
- 1 tablespoon lime juice
- 1 birds-eye chilli, de-seeded
- 2 teaspoons palm sugar
- 2 teaspoons fish sauce
- 1 tablespoon peanut oil

Process corainder in a food processor until finely chopped, and then add the remaining ingredients and process until they are well combined.
