Coriander Lime and Ginger Dipping Sauce - Crystal Bay Prawns

Corainder, Lime and Ginger Dipping Sauce


(Serves 4-6)

Ingredients
  • 1kg fresh-cooked whole Crystal Bay Prawns
  • 1 bunch of coriander
  • 1 teaspoon finely grated ginger
  • 1 tablespoon lime juice
  • 1 birds-eye chilli, de-seeded
  • 2 teaspoons palm sugar
  • 2 teaspoons fish sauce
  • 1 tablespoon peanut oil

Process corainder in a food processor until finely chopped, and then add the remaining ingredients and process until they are well combined.
