Chilli Vodka Shots - Crystal Bay Prawns

Chilli Vodka Shots


(Serves 6)

Ingredients
  • 180ml vodka
  • 2 medium orange chillies sliced into rings
  • 6 raw peeled tail-on Crystal Bay's
  • 1 jar of trout pearls

Select your favourite vodka, measure 180ml (6 shots) into a jug, add the sliced chilli and refrigerate for at least 1 hour.

In a pan of salted water, poach the prawns until cooked, drain, then thread a skewer through the tail and body. Transfer to a plate and refrigerate.

Take 6 cold shot glasses and fill each with a shot of vodka, making sure there are a couple of pieces of chilli in each glass. Place 1/2 teaspoon of trout perals into each shot glass and serve with a skewered prawn on top of each glass.
