Chilli Soy and Lime Prawns With Soba Noodles


(Serves 6)

Ingredients
  • 400g Crystal Bay prawns - raw, peeled, tail on.
  • 400g soba noodles
  • 1 tablespoon canola oil
  • 30ml sweet chilli sauce
  • 30ml honey
  • 1 medium red chilli de-seeded and diced
  • 30ml sweet soy sauce
  • 4 bok choy heads, cut in half lengthwise
  • 4 pieces Chinese broccoli
  • 1 lemon and 1 lime (lime cut into 4 wedges)
  • 1 cup fresh sprouts
  • 4 sprigs coriander


Cook the soba noodles in a saucepan of hot water for a few minutes. Drain and toss with a little dash of oil and set aside in a warm place.

Combine the sweet chilli sauce, honey, diced chilli and sweet soy sauce in a small bowl and set aside. Blanch bok choy and Chinese broccoli in a pot of boiling water for 30 seconds, drain and keep warm.

Heat a little oil in a frying pan, season prawns with a little salt and cracked pepper and sear until cooked.

To serve, place the bok choy and Chinese broccoli in the centre of each plate, lay on the soba noodles the arrange prawns around the top. Pour the sweet chilli sauce around the plate, squeeze a little lemon juice over prawns and garnish with crisp bean shoots, a sprig of fresh coriander and a wedge of lime.
