Spaghettini with Crystal Bay Prawns and rocket

Ingredients

- 100gm Peeled Crystal Bay Prawns
- 180gm Blanched Spaghettini
- 1 finely sliced long red Chilli
- 1 tbls minced garlic
- 100ml white wine
- 50gm unsalted butter
- 10ml lemon juice
- 50gm rocket leaves
- 50gm grated parmesan cheese
- 100ml water

Method
Sautee prawns in a pan lightly, add garlic, sliced chilli, continue to sautee till garlic is slightly browned then deglaze with white wine, add water, lemon juice and butter. Reduce till creamy then add blanched spaghettini, rocket, parmesan and season with sea salt and pepper, toss till rocket wilts and its ready to serve.
Note: For more heat you can add Chilli Flakes or Birds Eye Chilli
